Fast, Juicy Weeknight Meatballs

Restaurant-quality meatballs that don’t take all day. These are browned on the stovetop, then finished in a quick tomato sauce so they stay juicy and taste like they came from your favorite Italian spot. Hot take, but the long-simmer versions are often drier than necessary

Ingredients
  

Meatballs
  • 1 lb high-fat ground beef
  • 1 lb Italian sausage
  • ½ yellow onion finely diced and cooked until soft
  • Fresh parsley finely chopped
  • Italian breadcrumbs about ½ cup, just enough to bind
  • 1 large egg
  • Dried oregano
  • Dried thyme
  • Garlic powder
  • Onion powder
  • Salt and black pepper
  • Olive oil for cooking
Quick Tomato Sauce (you can cheat with jarred sauce)
  • 1 large can tomato sauce
  • Fresh garlic minced
  • Dried oregano
  • Dried thyme
  • Fresh basil if you have it
  • Salt and black pepper to taste

Method
 

Prep the onion
  1. Cook the diced onion in olive oil over medium heat until soft and translucent. Let cool slightly.
Make the meatball mixture
  1. In a large bowl, combine ground beef, Italian sausage, cooked onion, parsley, breadcrumbs, egg, oregano, thyme, garlic powder, onion powder, salt, and pepper.
  2. Season VERY generously — more than you think you need. This is the key to the best meatballs.
  3. Mix gently by hand until just combined. Do not overwork. That makes them tough.
Brown the meatballs
  1. Heat olive oil in a wide pan over medium-high heat. Roll meatballs and add to the hot oil. Brown well on all sides. Don’t rush this — this is where the flavor happens. The meatballs do not need to be cooked through yet.
Make the sauce and finish
  1. Once the meatballs are browned, add the tomato sauce directly to the same pan along with garlic, oregano, thyme, basil (if using), salt, and pepper. Lower the heat and let the meatballs simmer in the sauce until cooked through and tender, about 15–20 minutes.
  2. Internal temp should be 160°F MAX — turn off the heat once you’re there. They can hang out on low as long as you want.
Serve
  1. Finish with freshly grated Parmesan and serve however you like, we love on a sub roll and mozzarella and parmesan cheese, served solo as an appetizer, or over a mezzi rigatoni.

Notes

  • I over-season compared to most people — adjust to your taste.
  • You can add a splash of milk or a tablespoon of ricotta to the breadcrumb mixture if you have it.
  • You can absolutely cheat with jarred sauce — I just like controlling the flavor.
