Ingredients
  

  • 2 lbs fresh spinach
  • 2 tbsp butter
  • 1 shallot minced
  • 3 –4 garlic cloves minced
  • 1 cup heavy cream
  • 2 oz cream cheese
  • ½ –1 cup freshly grated Parmesan
  • ¼ tsp nutmeg
  • 2 tbsp Worcestershire sauce
  • 1 –2 tsp fresh lemon juice
  • Salt and pepper to taste
  • ½ tsp onion powder
  • ¼ tsp paprika

Equipment

  • large skillet
  • measuring cup
  • cheese grater
  • wooden spoon or spatula
  • cutting board

Method
 

  1. Melt butter in a large skillet over medium heat.
  2. Add shallot and garlic. Sauté until soft and fragrant.
  3. Whisk in cream, cream cheese, and nutmeg until smooth.
  4. Stir in Parmesan until melted.
  5. Add spinach in batches, letting it wilt.
  6. Add Worcestershire, lemon, spices, salt, and pepper.
  7. Simmer until thick and silky.
  8. Taste and adjust.
  9. Serve with a fat juicy steak, and a potato of sorts and you're in business!
